Der Dreissigacker Grauburgunder wurde spontan vergoren und zu 70 % im Edelstahl und zu 30 % im Tonneau - sowie im Doppelstückfass ausgebaut. Zunächst lagerte der Wein für vier Monate auf der Vollhefe. Anschließend lag er bis zur Flaschenfüllung auf der Feinhefe. Durch den Ausbau im Edelstahl-Fass bleiben die Frucht und Vielschichtigkeit des Grauburgunders erhalten. Der Holzanteil verleiht ihm Kraft und Charakter und sorgt gleichzeitig für Harmonie.
